Ingredients
• 2-1/4 cup all-purpose flour
• 2/3 cup honey-crunch wheat germ
• 1/4 teaspoon baking Soda
• 1/2 cup rolled oats, uncooked
• 1/4 cup brown sugar, packed
• 1 tablespoon baking powder
• 1/2 teaspoon salt
• 1/2 cup egg substitute, thawed
• 1/3 cup walnuts, chopped
• 1 teaspoon vanilla extract
• 1-1/2 sticks margarine
• 1-1/2 cup mashed bananas
• 6 ounce can frozen apple juice concentrate, thawed

Directions

1. Preheat oven to 350 degrees F.
2. Grease 9″x5″ loaf pan.
3. In large bowl, mix first 7 ingredients.
4. With pastry blender, cut in magarine until mixture resembles coarse crumbs.
5. Stir in bananas, undiluted apple-juice concentrate, egg substitute, walnuts, and vanilla just until flour is moistened.
6. Spoon batter into pan.
7. Bake 60 minutes or until toothpick inserted into center of bread comes out clean.
8. Cool bread in pan on wire rack 10 minutes; remove from pan and cool slightly.
9. Serve warm, or cool completely to serve later.

Who doesn’t love fudge? Diabetics seem to think that just because they have to properly manage their diabetes and their sugar intake then they can’t partake in any type of tasty, delicious foods and desserts because they have too much sugar in them. But, this is untrue! Just because you are a diabetic doesn’t mean that you have to start counting out all the good, tasty foods when you can still allow yourself to partake in all of the tasty foods such as diabetic fudge recipes. Diabetic fudge recipes can be easy, fast and tasty all at the same time!
Easy chocolate fudge
1 14 1/2 oz. evaporated milk
3 tb Cocoa
1/4 c Oleo
Liquid Sweetner to equal to 1/2 cup of sugar
1/4 ts Salt
1 ts Vanilla
2 1/2 c Graham cracker crumbs
1/4 c Nuts
Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide mixture into 32 balls. Roll in remaining cracker crumbs and chill.

Fast and Easy Fudge
16oz cream cheese, 2 squares chocolate unsweetened 1-oz each, 1/2 cup Splenda, 1tsp vanilla, 1/2 cup nuts : melt chocolate. In small bowl beat cream cheese, chocolate, splenda, vanilla until smooth. Stir in nuts. Pour in well greased 8″ dish yield about 16 pieces will be soft.

Diabetic Cheesecake Recipe – Yum!

Who doesn’t love a good cheesecake! If you are like me and love my desserts,  it’s all good news with this diabetic cheesecake recipe! As long as you are following a well planned diabetes type 2 diet, then it’s OK to indulge in a little cheesecake every so often.

Having diabetes, doesn’t mean we have to deprive ourselves of the things we love in life! I made this a little while back for a dinner party I was hosting. What a hit! My friends were so surprised at the taste and texture of this dessert, they all wanted the recipe to make it again for themselves!

Crust:

1 cup graham cracker crumbs
2 tablespoon light margarine, melted
Combine cracker crumbs and margarine; press into bottom of an ungreased 9 inch spring form pan. Set aside.

Filling:

3 (8 ounce) packages low fat cream cheese, softened
2 tablespoons all-purpose flour
1/4 cup granulated sugar
3 tablespoons fresh lemon juice
3/4 cup egg substitute
1 (8 ounce) carton sugar-free, fat-free lemon yogurt
Assorted fresh berries, optional.

Now – Put it all together!

Beat cream cheese, flour and sugar until light and fluffy.  Gradually add lemon juice and egg substitute. Beat well. Fold in yogurt. Pour into crust. Cover loosely with foil.
Bake at 350ºF. for 60-70 min. or until center is almost set.
Cool to room temperature. Refrigerate. Garnish with berries if desired.

There are many different types of recipes for type 2 diabetes but some of the favorites are apple pie, broccoli salad, fruit salad and many others as well. Most diabetics don’t realize that they can eat just the same as other people without the added sugar or using the sugar substitute instead.

For example a great recipe for type 2 diabetes is Apple Pie and is as follows –

1 frozen pie shell

Preheat oven to 350 degrees

Peel and core, cut into thin slices 6-8 medium apples (a lot of people like their apples cut thin, but we prefer to chunk ours up or chop them up into smaller pieces, we find that holds the flavor better.)

As you are fixing the apples you can cook the frozen pie shell according to the directions on the package.

Place apples into a bowl and add 2-3 pats of butter, 1-2 tsp of cinnamon and 2-3 tablespoons of Splenda or Sweet and Low, mix well. Add mixture to the prepared and baked pie shell, sprinkle a little cinnamon on top and then put back into the oven until done, approximately 45 minutes to 1 hour.

This is a great recipe for type 2 diabetes patients or anyone that has diabetes.
