Who wants to be a diabetic and not get to enjoy yummy candy? Often times we plague diabetics as not getting to eat good food but often times that notion is all wrong. Diabetics can eat the same foods that we eat just in moderation and by often times substituting sugar with sugar substitutes. There are many various diabetic candy recipes, diabetic snack recipes and other recipes so that diabetics can have all of the same yummy treats that we do!

My grandmother was a diabetic for years before she passed away and the worst part for me was preparing snacks and candy for my kids but knowing that I couldn’t share them with her or if they took their treats up to her house she could get into them so I started researching diabetic candy recipes so that I could make yummy treats for not only my kids but also my grandmother to enjoy!

Pretzel Candy Crunch

(This is one of our favorites)

Ingredients

2 cups broken pretzels
1 cup tiny marshmallows
1/2 cup chopped salted cashews or peanuts
3/4 cup sugar
1/3 cup half-and-half or light cream
2 tablespoons butter or margarine
1 cup butterscotch-flavored pieces

directions

Combine pretzels, marshmallows, and cashews or peanuts in a large mixing bowl; set aside. Combine sugar, half-and-half or light cream, and butter or margarine in a heavy saucepan. Bring to boiling over medium heat, stirring constantly. Remove from heat. Add butterscotch pieces. Let stand 1 minute to soften pieces. Stir until combined. Let stand 5 minutes.
Pour butterscotch mixture over pretzel mixture; stir to coat. Drop by rounded teaspoons onto baking sheets lined with waxed paper. Chill until firm. Store in a tightly covered container in the refrigerator. Makes about 30 pieces.
Make-Ahead Tip: Prepare candy and store in a tightly covered container in the refrigerator up to 1 week.

When it comes to going on vacations or holidays it can often times seem overwhelming and confusing especially if you are trying to take care of meal planning for diabetics.

I know for me personally I have several diabetics in my family such as my grandmother and it often times can get discouraging trying to make sure we have meals that we all can enjoy but that won’t affect her sugar. For diabetics it can get tricky but the key part is not to let it get to you and impact how you feel about the situation.

When it comes to meal planning for diabetics or her in general I will make my meals ahead of time and not add any sugar to my baked beans, green beans or any other dish until I pull her a few spoonfuls out into a separate container so that she has her own without sugar. After, I remove her some food without the sugar then I can add any type of seasoning that I would like to the rest of the food. This will prevent her from having too much sugar but also allow her to eat what the rest of us is eating without feeling left out.

Meal planning for diabetics can be tricky around the holidays because there is so many different, yummy, sugary foods and deserts to eat and fix so I try to buy sugar substitutes such as Splenda or Sweet in Low and use instead of regular sugar because diabetics are allowed to use sugar substitutes.

Meal planning for diabetics can be rather challenging but by knowing what you can and can’t do is a great start to being able to plan accordingly so that the diabetic doesn’t feel left out and neither does anyone else.

Some of the foods that diabetics can eat are the same as me and you, but within moderation. The meals that diabetics can eat, foods that diabetics can eat and the diet that diabetics can eat are the same as anyone else just with moderation and careful planning. Being diabetic doesn’t mean the end of the world, being diabetic just means careful planning, better diets, reading labels and monitoring what you eat and consume more carefully than others.The meals that diabetics can eat are the same that you and I can eat without diabetes just without all of the sugar and extra salt.

My grandmother is diabetic and I used to think that it would be tough fixing two different meals every time that I helped them cook but then I learned that she could eat the same thing as me and you just without the added sugar, seasoning and salt. So, now when I fix meals for them and us I take hers out in separate containers before I add the extra sugar, salt or seasonings to it. The foods that diabetics can eat really are the same as what everyone can eat just in moderation.

Of course, there are many various cookbooks out there that can be rented, downloaded or purchased that have all sorts of various recipes that diabetics can eat so that they still can have meals fixed with sugar substitutes in order to have that yummy, delicious taste instead of a more bland and plain taste.

There are all sorts of places to find a list of foods that diabetics can eat such as online, through your doctor’s office or physician or local library. After all, the same fruits that diabetics can eat and the same foods that diabetics can eat are no different from me and you!
