Learn how you can cook in batches to save time.  This was a big one for myself, because I look at time in the kitchen as ‘wasted time.’  To get over this lie that I tell myself (because time in the kitchen is never really wasted) what I did was cooked larger portions of food, so that I would have several meals that I could put into the fridge, reheat, and eat them quickly.This was also important because on those days when I was feeling lazy and didn’t want to cook, the meals were already prepared in the fridge waiting for me!

Here’s a sample plan that you can follow:

Breakfast:
A good diabetic breakfast idea is to have a large banana with a cup of skim milk, along with one and a half cup of bran cereal and a tablespoon of cream cheese.

Lunch:
For lunch, simply have an ounce of low fat Colby cheese, ½ cup of mild salsa, 2 ounces of baked nacho chips, 2 ounces of ground turkey, along with 2 cups of chopped lettuce.

Dinner:
Dinner may consist of two thirds of a cup of brown rice with salmon, a teaspoon of olive oil, ½ cup of cooked carrots, 1 cup of skim milk and three quarters of a cup of pineapple for dessert.

So don’t be afraid to get creative when designing your 1800 Calorie Diabetic Diet Plan so that you can enjoy keeping your body healthy and fit and your blood sugar levels down!

Who doesn’t love fudge? Diabetics seem to think that just because they have to properly manage their diabetes and their sugar intake then they can’t partake in any type of tasty, delicious foods and desserts because they have too much sugar in them. But, this is untrue! Just because you are a diabetic doesn’t mean that you have to start counting out all the good, tasty foods when you can still allow yourself to partake in all of the tasty foods such as diabetic fudge recipes. Diabetic fudge recipes can be easy, fast and tasty all at the same time!
Easy chocolate fudge
1 14 1/2 oz. evaporated milk
3 tb Cocoa
1/4 c Oleo
Liquid Sweetner to equal to 1/2 cup of sugar
1/4 ts Salt
1 ts Vanilla
2 1/2 c Graham cracker crumbs
1/4 c Nuts
Combine milk and cocoa in saucepan. Beat well. Add oleo, sweetner, salt. Bring to boil. Remove from heat. Stir in remaining ingredients except 1/4 cup graham crackers. Cool about 15 minutes. Divide mixture into 32 balls. Roll in remaining cracker crumbs and chill.
There are many different types of fudge recipes and here are several that you can try and see which one that you prefer the best, try and fool your friends, family, whoever you want!
Fast and Easy Fudge
16oz cream cheese, 2 squares chocolate unsweetened 1-oz each, 1/2 cup Splenda, 1tsp vanilla, 1/2 cup nuts : melt chocolate. In small bowl beat cream cheese, chocolate, splenda, vanilla until smooth. Stir in nuts. Pour in well greased 8″ dish yield about 16 pieces will be soft.

Diabetic Cheesecake Recipe – Yum!

Who doesn’t love a good cheesecake! If you are like me and love my desserts,  it’s all good news with this diabetic cheesecake recipe! As long as you are following a well planned diabetes type 2 diet, then it’s OK to indulge in a little cheesecake every so often.

Having diabetes, doesn’t mean we have to deprive ourselves of the things we love in life! I made this a little while back for a dinner party I was hosting. What a hit! My friends were so surprised at the taste and texture of this dessert, they all wanted the recipe to make it again for themselves!

Crust:

1 cup graham cracker crumbs
2 tablespoon light margarine, melted
Combine cracker crumbs and margarine; press into bottom of an ungreased 9 inch spring form pan. Set aside.

Filling:

3 (8 ounce) packages low fat cream cheese, softened
2 tablespoons all-purpose flour
1/4 cup granulated sugar
3 tablespoons fresh lemon juice
3/4 cup egg substitute
1 (8 ounce) carton sugar-free, fat-free lemon yogurt
Assorted fresh berries, optional.

Now – Put it all together!

Beat cream cheese, flour and sugar until light and fluffy.  Gradually add lemon juice and egg substitute. Beat well. Fold in yogurt. Pour into crust. Cover loosely with foil.
Bake at 350ºF. for 60-70 min. or until center is almost set.
Cool to room temperature. Refrigerate. Garnish with berries if desired.

Serves 16

  • Cholesterol: 25 mg,
  • Carbohydrate: 16 gm,
  • Protein: 7 gm,
  • Fat: 10 gm

The one main thing to remember about being a diabetic is how to properly manage and take care of yourself by watching your consumption of carbohydrates, fats and of course, sugars. Is there really a thing as good food for diabetics? Diabetics and people who know diabetics seem to all have a notion that when you are a diabetic there is no good food out there to eat. Is that true? No!

There are many good foods for diabetics, it just may take a little time to get used to them and find the right ones for you. Good food for diabetics can come in many different forms, kinds and styles. For instance, fresh fruits are good for those who love fruit but even though it is fresh it still contains a lot of natural sugar so fruits need to be eaten in moderation. Fresh veggies are great and almost all of the vegetables are good for you and don’t contain too many sugars, just eat in moderation. Potatoes, bread and pasta on the other hand are carbohydrates which break down into fully loaded starches so they aren’t always the best options. Carbohydrates and starches can still be eaten but in moderation.

Good food for diabetics are out there such as pretzels, cottage cheese, peaches, whole grain pasta and breads, peanuts, popcorn, goldfish, animal crackers and many other types of snacks are great because they are low in sugar. For many people they get lost when it comes to reading labels because they think because a label, reads no sugar or sugar free then that is always the case but it isn’t, ALWAYS read labels and see what the product contains before you purchase it or consume it.
